I love broccoli! :)

Steaming some broccoli tonight. for the first time, actually. I've never steamed anything before. So far so good. :)

I'm in a hurry tonight (ZUMBA) so I just popped some frozen chicken in the microwave. Added salt and some mid chili powder from Whole Foods.

Also, made some brown rice.

Well, I'm great at this...

As you can tell, I don't get on here much anymore. I forgot about it. Whoops!

I made this the other night. It was super easy and YUMMY! (I think the yummy part is what matters most!)

Italian Spinach and Chicken

2 Skinless, boneless chicken breast halves, cut into bite sized pieces
2 cloves of garlic, minced
2 tbsp chopped shallots ( i used green onions)
1 can of diced tomatoes (I had to improvise on this one, because when i went to look for the diced tomatoes I couldn't find them. the worst part is I found it yesterday!)
3/4 Cup or Shredded parmesan cheese
frozen spinach, thawed
1 cup of shredded mozz cheese
2 cups of cooked rice
1 tbsp of olive oil

In a large skiller cook chicken, garlic, and shallots in 1 tbsp of oil over medium heat for 5 minutes or until chicken is no longer pink.

Stir in tomatoes, parm cheese. Simmer, COVERED, 20 minutes, stirring occasionally.

Add spinach and simmer, still stirring occasionally, for about 10 minutes.

Sprinkl with mozz cheese if desired.

Serve over rice.

Recipe Numero UNO

ok so today for lunch I made “Italian-Style Chicken Over Pasta.”


It’s a Publix recipe.


Prep and Cook: 20 min. (makes 4 servings)


ingredients:

  • 8 oz publix wide egg noodles
  • 1 ¼ lb Publix boneless chicken cutlets
  • 2 tbsp Publix Lemon Herb Finishing Butter
  • 1 (14.5 oz) can Publix Italian Style Diced tomatoes
  • 4 oz Publix shredded mozzarella cheese


Sometimes you’ve got to improvise, so here are the items I used.



My ingredients:

  • rotini noodles
  • boneless chicken breasts (frozen) from Target. Their brand is my favorite. You usually have to trim off a little fat, but it’s not as much as you have to cut off for Great Value Brand.
  • I made my own butter sauce using, lemon juice, lemon zest, italian seasoning, and melted butter.
  • a can of unsalted diced tomatoes
  • mozz cheese



This recipe was so easy.


First, for the pasta, I followed the directions on the pasta box. I made enough for both of us to eat. Then, I heated a sauté pan on medium heat for 2-3 minutes. I always forget to take the chicken out of the freezer until I’m ready to cook it! of course! So I took two chicken breasts and popped them in the microwave. The centers were still a little frozen, but I could still cut through them. I cut the chicken breasts into strips. The recipe said 2 inch strips.


I melted the two tablespoons of butter, lemon juice, lemon zest, and italian seasoning for about 1 minute and added it to the sauté pan; tossed in the chicken. Cooked for about 3-4 minutes.


I drained the tomatoes and put them in the pan with the chicken to cook for another 2-3 minutes. Reduced the heat to medium-low and covered for about 4 minutes or so.


Then take some mozz cheese and sprinkled it over the chicken. Let it melt.


Drain your pasta. (I added some salt an italian seasoning.)


and then, serve!


Only took me about 20 minutes to make. and it was a super easy cleanup too!
